Ingredients

  • Chicken Drumsticks: 1 Kg

  • Oil: 1 Cup

  • Onions: 1 Medium (Sliced)

  • Ginger Paste: 1/2 Tbsp

  • Garlic Paste: 1 Tbsp

  • Yogurt: 1 Cup

  • Flour: 1/2 Cup

  • Flour: 1/2 Cup

  • For Nihari Masala
  • Black Pepper Corns: 1 Tsp

  • Cloves: 1/2 Tsp

  • Mace: 1 small piece

  • Cinnamon Stick: 1

  • Nutmeg: 1 Small Piece

  • Green Cardamom: 6

  • Star Anise: 2

  • Fennel Seeds: 1.5 Tsp

  • Coriander Seeds: 1 Tbsp

  • Black Cumin Seeds: 1/2 Tsp

  • Cumin Seeds: 1 Tsp

  • Salt: 1 Tsp

  • Ginger Powder: 1 Tsp

  • Red Chilli Powder: 1 Tsp

  • Kashmiri Laal Mirch: 1 Tsp

  • Citric Acid: 1/4 Tsp

  • For Nihari Garnishing
  • Chopped Coriander

  • Sliced Ginger

  • Sliced Green Chillies

  • Lemon Juice

Method and Instructions

  • Grind all the Spices for Nihari Masala (mentioned above) and Set Aside for Later Use.

  • In a pan add 1 Cup Oil, Sliced Onions.

  • Fry the Onions till Golden Brown, then add 1 kg Chicken Drumsticks.

  • Add 1/2 Tbsp Ginger Paste, 1 Tbsp Garlic Paste, Fry the Onions till Golden Brown, then add 1 kg Chicken Drumsticks.

  • Add 1/2 Tbsp Ginger Paste, 1 Tbsp Garlic Paste, Add the Nihari masala and Fry well for 1-2 minutes. 

  • Add 1 Cup Yogurt and Mix Well. After Frying well, add 1.5 Litre Water.

  • Cover & Cook on Low Flame for 1 hour.

  • Meanwhile, add 1/2 Cup Flour in 1 Cup Water and Mix Well.

  • Add the Flour Mixture in the Nihari while Mixing and Cover & Cook on Low Flame for 10 minutes.

  • Garnish with Chopped Coriander, Sliced Ginger, Sliced Green Chillies and Lemon Juice.
