Ingredients

  • For Yeast Mixture
  • Cheeni (Sugar): 1/2 Cup

  • Paani (Warm Water): 1/3 Cup

  • Khameer (Yeast): 1 Tbsp

  • For Donut Dough
  • Maida (Flour): 2 Cups

  • Cocoa Powder: 1/2 Cup

  • Baking Powder: 1 Tsp

  • Namak (Salt): 1/4 Tsp

  • Anda (Egg): 1 

  • Buttermilk: 1/3 Cup

  • Oil: 1/4 Cup

  • For Chocolate Glaze
  • Cheeni (sugar): 1/2 Cup 

  • Paani (water): as required

  • Milk Chocolate: 300 gm

  • For White Glaze
  • Cheeni (Castor sugar): 1 Cup

  • Vanilla Essence: 1 Tsp

  • Doodh (milk): 3 Tbsp

  • For Coconut Filling
  • Khopra (Dessicated Coconut): 1.5 Cup

  • Condensed Milk: 1/2 Tsp 

Method and Instructions

  • Make the Yeast Mixture by first dissolving the Sugar in the Warm Water & then adding the Yeast. Mix slightly & set aside till yeast activates.

  • Make the Donut Dough by adding all the Ingredients one by one & Mixing till a sticky & soft Dough forms. No Excess Water is needed to make the dough. You can knead the dough on a surface sprinkled with Flour but don't add more flour because it will be of no use. The dough in the end is super sticky, so just grease the bowl as well as the dough with oil, and put it inside. Cover the bowl with Cling Wrap & let it rest till it is double in size.

    The sticky kneading part can also be done with cleanliness in a Stand Mixer with a Paddle attachment if it is available!

  • Make the Coconut Filling by Mixing the 2 ingredients. It's that simple!  

  • Take out the dough on a Flour Sprinkled Surface and divide it into 12 parts. Make balls of each part and then flatten one with your fingers to now prepare a donut. Place a Tablespoon of the Coconut Filling in the centre and wrap the dough around it to make a ball. Roll the ball in your hands to make it smooth & then place it on a piece of Butter Paper. Do the same with each part of the dough and place each of them in separate butter paper squares (Note: the square should be bigger than the ball because it will increase in size after proofing). Cover the Donuts with a Cloth & set them aside at a slightly warm place for proofing. This will make the Donuts Bigger & Fluffier.

  • While the Donuts are Proofing, let's make the Glazes, starting with Chocolate. In a Saucepan, add the Sugar & some water, enough to soak the Sugar. Dissolve the Sugar in Water & then add Chocolate. Melt the Chocolate & make a smooth & shiny glaze. The Chocolate Glaze is ready. The Second Glaze is the White Glaze, for which you just need to mix all the Ingredients in a bowl. It is then ready too! 

  • Now it's time to finally fry the donuts! Add a Donut in the Medium Heated Oil along with the butter paper, so that the donut would not be de-shaped by the hands. Fry it on Medium Heat till the Donut is fully cooked & is hard from the outside. Take it out on Paper Towels & let it cool down. It is best to Dip the donut in the Chocolate Glaze right after frying, so the Glaze sets nicely. 

  • After all the Donuts are Fried, Glazed & Cooled down, it's then time to Decorate them! Make sure the glaze is now hard and set. So take a Donut and dip it lightly in the White Glaze, so that there is a smaller White circle on the Chocolate circle. Keep the Donut upside down for a moment till the glaze stops dripping and then Sprinkle Desiccated Coconut on the wet glaze, so that it sticks. Do this process with all the Donuts. 

    Now it's time to Enjoy the Fresh,Rich & Chocolaty Bounty Donuts!
