Ingredients

  • For Chicken Marination
  • Chicken: 1 kg

  • Ginger/Garlic Paste : 1 Tbsp

  • Yogurt : 4 Tbsp

  • Red Chilli Flakes : 1 Tbsp

  • Crushed Coriander : 1 Tbsp

  • Crushed Fenel Seeds : 1 Tbsp

  • Crushed Cumin Seeds : 1 Tbsp

  • Nutmeg Powder : 1 Tsp

  • Mace Powder : 1 Tsp

  • Green Cardamom : 1 Tsp

  • Salt : 2 Tsp

  • For Boiling Rice
  • Soaked and Strained Rice  : 1 kg

  • Water : 1.5 litre

  • Star Anise : 5

  • Bay Leaves : 1

  • Black Cardamom : 1

  • Black Pepper Corns : 10

  • Cinnamon Sticks : 1

  • Lemon Juice : 1 Lemon

  • Salt : 2 Tbsp

  • For Biryani
  • Oil : 1/2 Cup

  • Thinly Sliced Onions : 2 medium size

  • Green Chillies,Garlic,Adrak Paste : 2 Tbsp

  • Tomatoes  : 4 medium size

  • yogurt  : 1/2 cup

  • Dried Plums : 6

  • Tamarind : 1/4 Cup

  • Red Chill Powder : 2 Tsp

  • Garam Masala Powder : 1 Tsp

  • Salt : 1 Tsp

  • Orange food colour : 1 Tsp

  • Yellow food colour : 1 Tsp

  • Coriander : 1/2 Cup

Method and Instructions

  • Mix all the ingredients for Chicken Marination in Chicken and marinate for 45 mintes.

  • Add all the ingredients in water and boil the rice until 70% done.

  • Take 1/2 cup Oil in a Pan and add thinly sliced Onion, Fry till golden brown.

  • Take out half of the onions for garnishing, add 2 Tbsp Green Chillies+Garlic+Adrak Paste and fry for 1 minute.

  • Add 4 Tomatoes, Cover and cook for 2-3 minutes. Add 1/2 cup yogurt, Dried Plums, Tamarind, Red Chilli Powder, Garam Masala Powder and Salt.

  • Mix well and cook for 2 minutes add marinated Chicken, Fry till chicken turn white. Add 300 ml water.

    Cover and cook for 20 minutes, Add boiled and strained rice, Layer with sliced lemons, Layer with fried onions, Orange food colour, Yellow food colour, Layer with 1/2 Cup Mint Leaves, And 1/2 Cup Coriander.

  • Cover and cook on very low flame for 10 -15 minutes. Enjoy the Delicious Biryani.
