Ingredients

  • For Chicken Marination
  • Yogurt : 1 Cup

  • Lemon Juice : 1 lemon

  • Red Chilli Flakes : 1 Tbsp

  • Garam Masala Powder : 1 Tsp

  • Turmeric : 1 Tsp

  • Nutmeg : 1/2 Tsp

  • Mace : 1/2 Tsp

  • Salt : 2 Tsp

  • Coriander Powder : 1 Tbsp

  • Cumin Seeds Roasted & Crushed : 1 Tbsp

  • For Boiling Vegetables
  • Carrots : 1 Cup

  • Green Peas : 1 Cup

  • Potatoes : 1 Cup

  • For Boiling Rice
  • Soaked and Strained Rice: 1/2 Kg

  • Water :  1 litre

  • Salt : 2 Tbsp

  • Black Cumin Seeds : 1 Tsp

  • Star Anise : 3

  • Green Cardamom : 8

  • Black Cardamom : 2

  • Black Pepper Corns : 10

  • Cloves : 6

  • Cinnamon Stick : 1

  • For Biryani Qorma
  • Oil: 1/2 Cup

  • Onions Thinly Sliced : 1 Medium

  • Green Chilli: 2 Tbsp

  • Ginger Paste : 2 Tbsp 

  • Garlic Paste : 2 Tbsp

  • Tomatoes: 2 Medium

Method and Instructions

  • In a bowl take 1 cup Yogurt, Lemon Juice, 1 Tbsp Red Chilli Flakes, 1 Tsp Garam Masala Powder, 1 Tsp Turmeric, 1/2 Tsp Nutmeg, 1/2 Tsp Mace, 2 Tsp Salt, 1 Tbsp Coriander Powder, and 1 Tbsp Cumin Seeds Roasted & Crushed, Mix it well with chicken Drumsticks and marinate for 4 hours.

  • Take Water for boiling Vegetables in a Pot, add all the vegetables (mentioned above).

  • Boil for 3 to 5 minutes and Strain the Boiled Vegetables. Add 2 Tbsp Oil in a frying pan.

  • Fry Boiled Vegetables on Medium Flame for 5 minutes.

  • Take 1.5 Litre Water, add salt, Black Cumin Seeds, Star Anise, Green Cardamom, Black Cardamom, Black Peppercorns, Cloves, Cinnamon Stick.

  • Mix Well, Cover and Boil the Water. Add Soaked and Strained Rice: 1/2 Kg. Cover & Cook till 70% done.

  • Add 1/2 Cup Oil in a Karahi, Add thinly sliced onion and fry till golden brown.

  • Add 2 Tbsp Green Chilli+Ginger+Garlic Paste, add tomatoes. Cover & cook for 2 minutes.

  • Then add Marinated Chicken, Fry Well, then Cover and Cook on Low Flame for 10-15 minutes again.

    Now Cook on High flame to dry Water.

  • On the Korma add a Layer of Boiled and Strained Rice. Add Fried Vegetables and the remaining Rice, Orange Food Colour, Yellow Food Colour, Cover and cook on Low flame for 10 -15 minutes.
