Ingredients

  • For Chicken Marination
  • Boneless Chicken Cubes 500gm

  • Red Chilli Flakes 1 Tsp

  • Crushed Cumin 1 Tsp

  • Salt 1 Tsp

  • Black Pepper Powder 1/2 Tsp

  • Lemon Juice 1 Piece

  • Garlic Paste 1 & 1/2 Tbsp

  • Ginger Paste 1 Tbsp

  • Paprika Powder 1 Tbsp

  • Turmeric Powder 1/2 Tsp

  • For Green Paste
  • Ginger 1/2 inch piece

  • Garlic Cloves 4

  • Green Chillies 2

  • Onion 1 Medium

  • For Vegetable Kadhi
  • Oil 5 Tbsp

  • Red Chilli Powder 1 Tsp

  • Turmeric Powder 1 Tsp

  • Coriander Powder 1 Tbsp

  • Cumin Seeds Powder 1 Tbsp

  • Basil leaves 10

  • Peas 1 Cup

  • Diced Carrots 1 Cup

  • Diced Cauliflower 1 Cup

  • Gram Flour 4 Tbsp

  • Yogurt 1 Cup

  • Coconut Milk Powder 4 Tbsp

  • Salt 1-1/2 Tsp

  • Lemon Juice 1 Piece

  • Spaghetti 1 Packet ( Boiled & Strained)

  • For Topping
  • Fried Garlic Slices 1/4th cup

  • Fried Noodles 1 Cup

  • Fried Onions 1 Cup

  • Roasted & Chopped Peanuts 1/2 Cup

  • Chopped Coriander 1 Cup

  • Chili Oil 1/4th Cup

Method and Instructions

  • Mix all the ingredients of Chicken Marination (mentioned above) well & Marinate Chicken for 1 hour.

  • Take 4 Tbsp Oil in a pan, fry marinated Chicken.

  • Now make green paste by blending green paste ingredients (mentioned above)

  • Vegetable Kadhi.
  • Heat Oil 5 Tbsp in a pan, add green paste, fry the paste till light brown then add spices Red Chilli Powder, Turmeric Powder 1 Tsp, Coriander Powder 1 Tbsp, Cumin Seeds Powder 1 Tbsp, Basil leaves 10, Add little water and fry the spices well.

  • Now, add vegetables, Peas 1 Cup, Diced Carrots 1 Cup, Diced Cauliflower 1 Cup, Add 1.5 Litre Water to the mixture.

  • Mix Gram Flour 4 Tbsp in Yogurt 1 Cup and Coconut Milk Powder 4 Tbsp, add this mixture to the vegetables to make a kadhi.

  • Cover and cook till water reduced to 1/3rd.

  • Add Salt 1 & 1/2 Tsp, Lemon Juice 1 piece. Cook on low flame till kadhi thickened.

  • Preparation of Khao Suey Platter
  • Place Boiled & Strained Spaghetti in the centre of Platter, pour the Vegetable Kadhi around the spaghetti, Sprinkle Fried Chicken, and other toppings.

    Delicious Khao Suey Platter is ready to be served.
