Ingredients

  • For Mutton Yakhni (Broth)
  • Mutton: 750 gm

  • Water : 1.5 litre

  • Garlic Cloves: 8 - 10

  • Onion: 1 big

  • Ginger: 2 inch

  • Cloves: 6

  • Anise Star: 3

  • Cumin Seeds: 1 tsp

  • Black Cardamom: 2

  • Cinnamon: 2 small sticks

  • Black PepperCorns: 1 tbsp

  • Green Cardamom: 4

  • Coriander: 2 tbsp

  • Anise Seeds: 2 tbsp

  • Whole Red Chillies : 5

  • Salt: 1 tbsp

  • For Pulao
  • Soaked & Strained Rice: 750 gm

  • Oil: 1/4 Cup

  • Onions: 2 medium thinly sliced

  • Ginger+Garlic+green Chillies Paste: 3 tbsp

  • Cloves: 4

  • Green Cardamom: 4

  • Black Pepper Corn: 8

  • Cumin Seeds: 1 tsp

  • Black Cumin Seeds: 1 tsp

  • Coriander Powder: 1 tbsp

  • White Pepper: 1 tsp

  • Black pepper Powder: 1/2 tsp

  • Bay Leaves: 1

  • Cinnamon Sticks: 2 small

  • Black Cardamom: 1

  • 1 cup  Yogurt

Directions

  • Mix all the ingredients of mutton broth (mentioned above).

    Cover and Cook till water becomes half in quantity.

    Strain and separate the mutton & yakhni (broth).

  • Take 1/4 Cup oil and add 2 medium thinly sliced onions, Fry until Golden brown.

  • Take out half of the onions for later use and Add Ginger+Garlic+Green Chillies Paste, Strained Mutton, 4 Cloves, Green Cardamom, Black Pepper Corn, Cumin Seeds, Black Cumin Seeds, Coriander Powder, and mix well.

  • Add White Pepper, Black pepper Powder, Bay Leaves, Cinnamon Sticks, Black Cardamom, Add a little water & mix well, Add 1 cup Yogurt.

    Cover & cook till oil separates.

  • Now, Add Yakhni, Salt 2 Tbsp, Add soaked & strained Rice and Mix for a minute & let it Cook.

  • Cover & cook on low flame till rice are completely cooked Garnish with fried onions.

    Cover and cook for 5 minutes on low flame.

    Tasty Mutton Yakhni Pulao is ready to serve!
