Ingredients

  • 1 Ingredient
  • Coriander Seeds 1 Tbsp

  • Cumin Seeds 1/2 Tbsp

  • Fennel Seeds 1/2 Tbsp

  • Cloves 1 Tsp

  • Black Pepper Corns 1 Tsp

  • Green Cardamom 10

  • Black Cardamom 2

  • Star Anise 2

  • Nutmeg 1/2 Tsp

  • Mace 1/2 Tsp

  • Cinnamon Stick 2

  • Bay Leaf 1

  • Salt 1.5 Tsp

  • Red Chilli Powder 1 Tsp

  • Dried Plums 8-10

  • Yogurt 1 Cup

  • Chicken 1 kg

  • Potatoes 5

  • Onions 4 medium size ( finely Sliced)

  • Crushed Garlic 2 Tbsp

  • Crushed Ginger 1 Tbsp

  • Red Chilli Flakes 1 Tsp

  • Salt 1 Tsp

  • Tomato Puree ( 4 tomatoes blended)

Method and Instructions

  • Grind Coriander Seeds, Cumin Seeds, Fennel Seeds, Cloves, Black Pepper Corns, Green Cardamom 10, Black Cardamom 2, Star Anise 2, Nutmeg 1/2Tsp, Mace 1/2 Tsp, Cinnamon stick 2, Bay Leaf 1, Salt 1.5 Tsp, Red Chilli Powder 1 Tsp to make a Biryani Masala, add 8 to 10 Dried Plums, Mix with 1 Cup Yogurt.

  • Marinate 1 kg Chicken meat with the biryani masala for 1 Hour.

  • Boil Potatoes 5 ( cut in half) with 1 Tsp Salt and 1 Tsp Turmeric Powder. Boil till 50% done.

  • Fry Onions till golden brown 4 medium size ( finely sliced).
    (Separate Half of the brown Onions for later use)

  • In the remaining add Crushed Garlic 2 Tbsp, Crushed Ginger 1 Tbsp, fry for a while then add Marinated Chicken, mix well and fry on medium to high flame till chicken turns white. Now add Red Chilli Flakes 1 Tsp, Salt 1 Tsp, Tomato Puree ( 4 tomatoes blended)
    Mix well and cook on high flame for a while then turn the flame to medium, cover and cook for further 10 minutes. Add boiled Potatoes and cook for further 5 minutes. Qorma is ready.

  • Boil Rice 1kg (Soaked & Drained) in 2 to 3 litre Water till 70% done along with Star Anise. 8 to 10, Salt. 2 to 3 Tbsp, Cloves. 1 Tsp, Black Pepper Corns. 1 Tsp, Cinnamon Sticks 2, Black Cumin Seeds. 1 Tsp

  • Put a little oil in a pan, add a layer of rice, Then spread the chicken masala, again add a layer of boiled rice, place tomatoes, chopped Coriander, lemon slices, fried onion, and in the last a thin layer of boiled rice. Pour yellow and Orange food colour.

    Cover and cook on low flame for 10-12 minute.

    Serve Hot!
