Ingredients required for Cleaning, Marinating & Cooking

  • For Cleaning

    Vinegar: as required
    Salt: as required

  • For Marination
    • Cleaned Mutton Leg: 2 Kg
    • Red Chilli Powder: 4 Tsp
    • Coriander Powder: 4 Tsp

    • Turmeric Powder: 3 Tsp

    • Garam Masala Powder: 2 Tsp

    • Salt: 3 Tsp

    • Lemon juice: 2 Lemons

    • Egg: 1

  • For Steaming

    • Water: as required
    • Bay Leaves
    • Nutmeg
    • Mace

Directions

  • First things first, make holes in the Mutton Leg using a fork and clean it with Vinegar & Salt. Depending on the size of the leg, you can increase or decrease the amount of vinegar & salt. Rub both the ingredients on every part of the Leg and then refrigerate it overnight preferably or at least for 2 hours, so that all the extra water comes out of the mutton and it becomes clean & not stinky.

  • First things first, make holes in the Mutton Leg using a fork and clean it with Vinegar & Salt. Depending on the size of the leg, you can increase or decrease the amount of vinegar & salt. Rub both the ingredients on every part of the Leg and then refrigerate it for 2 hours, so that all the extra water comes out of the mutton and it becomes clean & not stinky.

  • After marination, wrap the Mutton Leg with Aluminium Foil properly, and make holes at the backside of the leg in the foil, so that any excess steam water pours out.

  • In a Big Pot, add water depending on the height of your steel stand. The water should not touch the bottom of the stand. Add some bay leaves, nutmeg & mace in the water and then place the stand. Place the Mutton Leg, the side from where we poked the holes should be placed on the stand. Cover & cook on Low Flame for 1 hour. The water in the pot should be enough so that it doesn't dry out while cooking, or if you think it is enough, but would dry out during cooking, then you can add a little more water carefully from the sides of the Mutton Leg after 5 -10 minutes of cooking.

  • If you want then you can serve the Mutton Leg right after it has been steamed. But if you want a nice brown colour on it, then you can apply a little oil on the surface and grill it in the oven till the desired colour is achieved.

    Serve it with Green Chutneys & rice/chapattis.
